The company is based in Solingen in Germany and is technically known as Wüsthof Dreizackwerk in German and Wusthof Trident in English. It is a family owned company and has been around since 1814. But of course we’re not here today to talk about their knives, despite the fact that we are huge fans of their knives and have one ourselves. We are here to talk about the Wusthof 3 Stage Electric Knife Sharpener. However a quick discussion of their knives is important before we consider their electric sharpener. There’s a reason
The new Wusthof PEtec knife technology
Recently Wusthof have pioneered a new technology for knife making called their PEtec which stands for Precision Edge technology. The object of this is to make their knives even sharper, or as they say on their website “to make something that is already good even better”.
This technology improves the sharpness of the knives and helps them retain that for a longer period of time.
The technology is quite complex, however it involves precise computer calculations for the sharpening angle of the blade of each knife, and then sharpening using lasers. Precision robots then polish the knife on a Whetstone before a final polish.
It is probably one of the most complicated knife manufacturing procedures we’ve heard about and produces an excellent result. It produces an extremely thin edge which is exceptionally sharp but which retains it sharpness for a long time.

So why are we talking about this when our article is about the Wusthof electric sharpener? Simply this. We are here to consider the Wusthof 3 stage electric sharpener and this sharpener is specifically designed to sharpen Wusthof PEtec knives.
The Wusthof 3 Stage Electric Knife Sharpener
If you visit the Wusthof website you won’t find their electric sharpener there, which seems strange. They certainly have plenty of manual knife sharpeners there.
The reason for this is that the Wusthof electric sharpener is not actually manufactured by Wusthof. This knife sharpener is manufactured by Chef’s Choice.
Chef’s Choice is probably the premier manufacturer of electric knife sharpeners in the world, and there are some outstanding Chef’s Choice electric sharpeners available.
So why not just buy a Chef’s Choice electric knife sharpener? The answer lies in the PEtec technology. As we’ve already explained Wusthof manufacture knives using this new technology and these electric knife sharpeners, manufactured by Chef’s Choice, are specifically designed to maintain the edge on any of Wusthof’s PEtec knives.
Electric knife sharpeners are designed to operate in a number of stages. Each of the slots in the sharpener represents one of the stages, and each slot has two sides, one for each side of the knife.
The operator begins with the slot that offers the coarsest grind, to produce a basic edge and moves through to the finest grind to hone and polish the edge. There are two stage and three stage electric sharpeners, but the basic principle is the same. The Wusthof 3 Stage Electric Knife Sharpener is, obviously, a three stage sharpener.
The Wusthof electric sharpeners are no different to other electric sharpeners in method of operation. You begin with the coarsest grind (if necessary) and moved through to the finest grind.
Stage 1, the coarsest grind, is a 100% diamond abrasive wheel, intended to create a brand-new edge of the knife blade. This is an extremely high quality diamond abrasive that produces an excellent result.
Stage 2 has a finer grit diamond wheel which refines the edge and hones it, and stage 3 is designed a strop the edge to polish it to a razor sharp edge.
But why not just buy a Chef’s Choice sharpener?
So what’s the difference between a regular Chef’s Choice electric sharpener and a Wusthof electric knife sharpener? Why not just buy a Chef’s Choice?
The difference lies in the angle of the grind. The PEtec knives are ground at a finer angle than is normal and for this reason the Wusthof PEtec sharpener grinds at 14 degrees rather than the more common 20 degrees.
Asian knives are well known for their superb sharpness. And Asian knives are generally ground at 15 degrees whereas American knives are more commonly ground at 20 degrees.
If you grind a knife to a finer edge it will produce a sharper result, however it will also produce a less long-lasting result. This is one of the characteristics that the Wusthof PEtec is designed to overcome. This technology produces a longer lasting edge, and the edge is sharper due to the finer grind.
However it’s also possible to buy a Chef’s Choice electric knife sharpener that will grind at 15 degrees. For instance the Chef’sChoice 1520 AngleSelect Diamond Hone Electric Knife Sharpener, as the name suggests, allows you to choose between two different angles of sharpening, namely 15 degrees and 20 degrees.
Many people choose to sharpen their knife to 15 degrees because they understand that it produces a better edge. It just might not last as long, unless you’ve got a Wusthof knife.
But then the the Wusthof 3 stage sharpener is usually cheaper than the Chef’sChoice 1520.
That’s a good reason to go for the Wusthof, as well as for the fact that it is specifically designed for your Wusthof knife.
And the Wusthof sharpener will sharpen other brands of knives very well too, (just read some of our user comments below). Though the edge of other brands might not last quite as long as they are sharpened at 14 degrees not 20. But it will produce a great result.
But in our view most people will find that either the Wusthof, or the Chef’s Choice, will both produce a great result. If you just have Wusthof PEtec knives choose the Wusthof and if you have a range of different knives to sharpen, and would like the option of either 15 degrees or 20 then you might be better to choose the Chef’s Choice, though the Chef’s Choice will generally cost you more.
The Wusthof is a quality made in the US sharpener that comes with a 3 year warranty. You will not be disappointed with this sharpener.

The Cons – Wusthof Electric Knife Sharpener Review
Just about every product ever made will have some negative comments. There were very few negative comments about this product compared to the positive comments.
Some of the negative comments note that this sharpener is not cheap. Mind you nothing about a quality product is usually cheap.
One person complained that the knife sharpener came with a rubber foot missing and had trouble replacing it. And a couple of people noted that some of the draw through surfaces marked quickly as they were a little soft.
Another negative common to all electric knife sharpeners is that it is a little bulky and you will need to find some cupboard space to store it.
A fantastic knife sharpener, particularly for Wusthof knives, but also for other knives as well. You certainly won’t be disappointed if you buy the Wusthof 3 stage electric knife sharpener.
